Preparation Time: 15 minutes
Cooking Time: 25–30 minutes
Ingredients:
- 500 grams carrots (grated)
- 500 ml full cream milk
- 4–5 tbsp sugar (adjust to taste)
- 3 tablespoon ghee
- 8–10 cashews (chopped)
- 8–10 almonds (chopped)
- 4–5 raisins
- ½ tablespoon cardamom powder
Method:
- Wash, peel and grate the carrots finely.
- Fresh red carrots work best for taste and colour.
- Cook Carrots in Milk
- Heat a pan or kadhai.
- Add grated carrots and milk.
- Cook on medium flame.
- Stir occasionally until the milk reduces and the carrots become soft.
- Add Sugar
- Add sugar and mix well. (The mixture will become slightly watery again. This is normal.)
- Cook until the moisture reduces.
- Add Ghee & Dry Fruits
- Add ghee and cook while stirring.
- Add cashews, almonds and raisins.
- Cook until halwa becomes thick and slightly glossy.
Add Flavour:
- Mix cardamom powder.
- Cook for 2 more minutes and switch off flame.
Serving Tips:
Serve hot for the best taste.
You can garnish with extra nuts or a scoop of vanilla ice cream (it’s an amazing combo).
