Gajar Ka Halwa (Indian Carrot Pudding)

Preparation Time: 15 minutes

Cooking Time: 25–30 minutes

Ingredients:

  • 500 grams carrots (grated)
  • 500 ml full cream milk
  • 4–5 tbsp sugar (adjust to taste)
  • 3 tablespoon ghee
  • 8–10 cashews (chopped)
  • 8–10 almonds (chopped)
  • 4–5 raisins
  • ½ tablespoon cardamom powder

Method:

  • Wash, peel and grate the carrots finely.
  • Fresh red carrots work best for taste and colour.
  • Cook Carrots in Milk
  • Heat a pan or kadhai.
  • Add grated carrots and milk.
  • Cook on medium flame.
  • Stir occasionally until the milk reduces and the carrots become soft.
  • Add Sugar
  • Add sugar and mix well. (The mixture will become slightly watery again. This is normal.)
  • Cook until the moisture reduces.
  • Add Ghee & Dry Fruits
  • Add ghee and cook while stirring.
  • Add cashews, almonds and raisins.
  • Cook until halwa becomes thick and slightly glossy.

Add Flavour:

  • Mix cardamom powder.
  • Cook for 2 more minutes and switch off flame.

Serving Tips:

Serve hot for the best taste.

You can garnish with extra nuts or a scoop of vanilla ice cream (it’s an amazing combo).
